You can enjoy the best performance of your wine at a proper temperature. White wine served chilled, red wine served around 12-16℃. Differently from that, this village has white wine never served chilled. The name of village, Château-Chalon.

The word of ‘Château’ is not familiar, neither ‘Chalon’. The location of this village is also not easily found. Its altitude is 500m, so driving there is almost climbing. And it’s so small, I might count the number of all houses here. But Château-Chalon has a magnificent view surrounded by vineyards that made me speechless.

Château-Chalon is in Jura, nearby Alsace. The name of white wine here is ‘Vin Jaune’, in English ‘Yellow Wine’. It’s one of white wine but the vinification is something special. The area of production is also limited. So, as you guess, it is not a daily wine. Obviously Château-Chalon is very rare and unique wine. But the uniqueness, specialty… it always gives us an expectation.

Let’s see more about Vin Jaune. It’s produced only in Jura with 100% of Savagnin grape. Vin Jaune is aged in oak barrel after fermentation. The interesting and different thing of this process is not completely filled a barrel, having some room inside. Then, wine is evaporated and oxidized, gradually a film of yeast has formed on the surface. It gives very unique complexity of aroma and flavor with 50 years potential.

After aging 3 years like this, the wine called ‘Côtes du Jura’, and aging 6 years it is ‘Château-Chalon’ which is the best Vin Jaune. It is not served chilled like general white wine. You never find out a beautiful Vin Jaune then. Serve it at the same temperature with the place where you drink.

Have you ever felt grain aroma from a wine? From Vin Jaune, you will. This aroma is caused by Savagnin grape and special vinification method. Of course, you can also find the fruit aroma at the same time, so it’s truly complex with various flavors. The taste is so dry, but amazingly fresh. Is it really for 6 years aged?

Now it’s understandable to drink at the room temperature. The complexity and lingering finish couldn’t be performed if it’s chilled. Another recommendation to enjoy Château-Chalon is drinking with Comté cheese. When I visited Château-Chalon, I had serious homesick suffering from too much cheese in all French food. However, with Château-Chalon wine, I could finish two packs of Comté.

Many people say that wine is difficult. One of reason I think might be diversity. Because even with same grape, wine is totally different depending on where, how, when and who produces. Naturally a bunch of wines can’t belong to simply one brand name.

But I think wine is interesting alcohol though as it’s so much various. Each of us has different taste. How could we make a same choice of same taste alcohol for all the time? It’s too boring then. Château-Chalon is a unique wine, you need to have an effort to find it. That’s why it can be very special only for you.
