Italien style Gamjatang – a must-visit place in Daehakro, Oh! Gamjatang

In succession of ‘Soondae Chronicle’, I would like to introduce another restaurant in Daehakro. Korean’s idea of pork backbone stew is the bone boiling in a pot with chunky potatoes, dried cabbage leaves, buried under a pile of chopped sesame leaves and the fun of working through the bone to get the meat and bone marrow off of it. People crave it even more as sort of hearty stamina food on a very cold day when your body can’t help itself but trembles. 

The place I want to tell you about today doesn’t serve this typical Korean idea of the stew on the menu. The Gamjatang is made with tomatoes, cheese, cream sauce and other exotic ingredients. This Italian style restaurant ‘Oh! Gamjatang’ had invented Milan style Ganjatang then earned more fame by being on the show ‘Find it! Delicious TV’ just recently which made the waiting line at the door even longer.

‘Milano Gamjatang’ was invented by the chef from ‘PIzzeriao’ a Neapolitan style brick oven pizza place. When the chef was studying at a culinary school in Italy, he was invited to taste Minestrone at an old Italian lady’s house in a small town. He couldn’t forget the flavor even after he came back to Korea and decided to recreate the recipe. Minestrone is Italian vegetable soup that is quite thick as it is made with pasta or soup. It definitely wasn’t easy to adapt the recipe to Korean style, however after a long 3 years and 6 months of research, the Italian lady’s Minestrone was recreated in Korea.

Milano Gamjatang uses meat broth that has been boiled for 3 hours with tomatoes. Instead of backbone it uses whole bones, which the meat around it is more tender and delicious. In order to add more fresh flavor to the soup, he added mussel, Parpalle pasta or Sujebi(pulled dough). Tomatoes and Ruccola on top of the stew make the pot look more refreshing. The irreplaceable ingredient, potatoes are supplied by only the best farmers each season: in spring it is supplied from Kimje, in summer, from Pyungchang, in autome, from Goheung then in winter from Jeju Island.

Oh!Gamjatang uses 100% nature & pure Ingredients for menus

Once Milano Gamjatang is set on a stove on the table, the waiter will sprinkle cheese that is ground right at the table then it will be brought to boil before cream sauce is poured in to transform the stew once more. The stew is surprisingly not greasy but rather spicy with meaty flavor. The whole bones, potatoes, mussel and other stuff in the pot aren’t everything about this stew. Once you finish all that, you can add rice to the left over soup, which transforms it once again into risotto. At a regular Italian restaurant, risotto is just over 10.000won, however at ‘Oh! Gamjatang’ it will cost only extra 3.000 won to make risotto at your table. Talking about catching 2 birds with one stone. Kimchi made with cherry tomatoes is another “cherry on top” you can get from this restaurant.

More than the traditional Gamjatang, Milano Gamjatang of Oh! Gamjatang

Not only can you have Italian Gamjatang but you can also have more traditional Gamjatang called ‘Oh! Gamjatang’ If you prefer the traditional Gamjatang then the stew made with beef leg bone broth, whole bone, dried radish greens and potatoes will satisfy your preference. Also the steamed whole bone marinated in custom made sweet and sour sauce, grilled spicy baby octopus, pancake made with freshly ground potato flour are perfect companions for your drinks as well. Oh! Gamjatang serves our traditional drinks such as Potato wine from Gangwon province, Moonbae liquor and Plum liquor, which are highly recommended to enjoy with Gamjatang as it enriches the deep flavor of Gamjatang.

획기적인 이태리 감자탕 대학로 맛집, !감자탕

앞서 추천한 순대실록에 이어 오늘도 대학로의 맛집을 소개할까 한다. 한국식 감자탕 하면 떠오르는 이미지가 있다. 돼지등뼈와 감자, 우거지, 깻잎이 풍성하게 들어가고, 가스 불에 올려 보글보글 잘 끓여낸 뒤 등뼈에 붙은 살 발라서 먹는 식의 감자탕이다. 뜨끈한 국물이 있어 날이 춥거나 몸이 으슬으슬할 때 든든한 보양식으로 찾는 사람들도 많다. 그런데 이 집에서 대표 메뉴로 내놓고 있는 감자탕은 흔히 우리가 생각하는 감자탕이 아니다. 감자탕에 토마토와 치즈, 크림소스와 같은 재료들이 들어간다. 최근 찾아라 맛있는 TV에 소개되어 연일 줄 서는 손님으로 문전성시를 이루고 있는 이 곳은 오!감자탕. 최초로 이태리식 감자탕인 ‘밀라노 감자탕’을 선보인 곳이다.

A cherry tomato geotjeori of Oh! Gamjatang

‘밀라노 감자탕’은 나폴리 화덕 피자 전문점인 ‘핏제리아오’의 셰프가 직접 개발한 메뉴다. 이태리에서 요리 공부를 할 당시 셰프가 밀라노의 한 시골마을에서 이웃집 할머니의 미네스트로네를 맛보았고, 그 정겨운 맛을 잊지 못해 한국에서 재현해 보기로 마음먹고 레시피 연구를 시작했다고 한다. 미네스트로네는 파스타나 쌀을 넣어 걸쭉하게 끓여 만드는 이탈리아의 채소 수프. 이를 한국식 감자탕에 접목하는 건 결코 쉽지 않았지만, 3년 6개월이라는 긴 노력 끝에 이태리 할머니의 미네스트로네가 한국에서 탄생할 수 있었다고.

밀라노 감자탕은 토마토와 고기를 3시간 동안 푹 우려낸 육수를 사용한다. 일반적으로 사용하는 흔한 뼈가 아닌 육질이 부드럽고 쫄깃한 통뼈만을 사용했고, 시원함을 더해주는 홍합과 파르펠레 파스타, 수제비 등이 들어간다. 토핑으로 얹어진 토마토와 파릇파릇한 루꼴라가 상큼한 비주얼을 선사해준다. 감자탕에 빠질 수 없는 감자는 최상급 감자를 공수해서 쓴다고 하는데, 사계절 별로 봄에는 김제, 여름에는 평창, 가을에는 고흥, 겨울에는 제주도에서 들여온다고 한다.

테이블에 밀라노 감자탕이 세팅되면 그 자리에서 즉석으로 치즈를 갈아서 토핑으로 뿌려주고, 국물이 보글보글 끓기 시작하면 특제 크림소스를 부어 변신을 거듭한다. 이렇게 해서 완성된 맛은 전혀 느끼하지 않고, 담백하고 살짝 매콤하면서도 부드럽다. 통뼈와 감자, 홍합 등을 다 먹고 나면 여기서 끝이 아니다. 남은 국물에 밥을 비비면 리조또로 또 한차례 변신. 이탈리안 레스토랑에서 보통 리조또를 주문하면 1만원이 넘는데, 오’감자탕에서는 3천원만 추가하면 밥에 치즈와 버터를 넣고 고소한 리조또까지 맛볼 수 있어서 1석 2조이다. 반찬으로 주는 방울토마토로 담근 김치는 별미로 곁들이기 좋다.

이 곳에서는 이태리식 감자탕과 함께 전통 감자탕인 오!감자탕도 맛볼 수 있다. 제대로 우려낸 사골육수에 최상급 통뼈와 무청시래기, 감자를 사용해 한국식 감자탕을 선호하는 분들이 맛보기 좋다. 매콤달콤한 특제 소스를 활용해 푸짐한 통뼈를 끓여낸 왕통뼈찜이나 매콤하게 양념된 주꾸미를 직화구이로 볶아낸 철판 주꾸미, 통감자를 즉석에서 갈아 노릇하게 구워낸 생생감자전은 술안주로도 딱이다. 오!감자탕에서는 우리 전통주인 강원도 감자술과 문배술과 매실원주도 판매하고 있는데, 감자탕과 함께 곁들여 보길 권한다. 감자탕의 깊은 맛을 더욱 살려준다.
